Usana Sauvignon Blanc 2013

Tasting notes:
The Usana Sauvignon Blanc has a lively acidity balanced out by the more tropical fruit characteristics it displays. On the nose and palate there are hints of gooseberry, passion fruit, with hints of freshly cut grass.  We believe that our wine improves with age and drinks at its best after a year or two of being in the bottle. This allows for the acidity to soften and the fruit to develop.
Vinification:
Our grapes came from a block in our Stellenbosch vineyards. All the vineyards were trellised. All grapes are harvested by hand in individual bins in optimal conditions to ensure true quality from beginning to end.We do whole bunch press. The juice is transferred to stainless steel tanks where it settled over night. We used an organic yeast to ferment the wine. Fermentation took 18 days to finish at a temperature around 14 degrees Celsius. The wine spent 5 months on the lees in stainless steal tanks with occasional batonnage before racking off the fine less, fining, and stabilizing.
